White Bean Zucchini Salad with Mushrooms, Basil & Oregano

PREP TIME: 2 HR                 COOKING TIME: 1 HR                  SERVES: 6

Ingredients

Zucchini
-2-3 medium zucchini, sliced
-2 tbsp olive oil
-coarse salt & freshly ground pepper
-season w/salt, pepper, olive oil

Mushrooms
-6 fresh portabella mushroom caps
-4tbsp olive oil
-coarse salt & freshly ground pepper
-season w/salt, pepper, olive oil

White Bean Salad
-4 cups cooked cannellini beans
-3 large shallots, diced
-1/4 tsp ground fennel seed
-5 tbsp red wine vinegar
-3 spring fresh oregano, chopped
-salt & pepper to taste

Directions

  1. Preheat grill to high, grill zucchini until lightly charred & tender on both sides, let cool then chop
  2. Grill portabella caps until lightly charred and tender on both sides, let cool then chop
  3. Add the zucchini, mushrooms, beans, basil & oregano to a bowl.
  4. Season to taste with salt & pepper – toss well.
  5. Serve warm, or at room temperature.

 

Note

Goes great with a fresh baguette & goat cheese. Enjoy!
